Jackie Elkins, Baked T'Shuvah's founder (https://www.bakedtshuvah.com/ and Instagram @baked_tshuvah_challah), will walk us through how to make challah bread. Jackie Elkins volunteers at Beit T'Shuvah, a Jewish nonprofit in LA, and runs weekly challah baking classes there. Feel free to follow along or watch. List of ingredients to purchase are below.

This makes 2 challah. Please measure all ingredients ahead of the class and use instant yeast (not active). If anyone has trouble finding instant, it takes 10 minutes to proof active yeast (Jackie can show you how)

-kitchen scale
-56 grams OR 1/4 cup vegetable oil
-75 grams sugar OR 6 tablespoons + 25 grams honey OR 2 tablespoons
-178 grams OR 3/4 cup room temperature water
-8 grams instant yeast OR 1 pkg OR 2 1/4 teaspoons
-2 large eggs plus 1 egg to glaze challah before baking
-480 grams flour + more until flour pulls away from bowl (4+ cups)
-12 grams salt (2 teaspoons)
-Mix-ins and/or toppings TBD (should be 20% of challah weight) - this is optional, but if you wanted to use chocolate chips or etc
